Using rosta- by itself wouldn’t work. You want an agental form, e.g. English “digger” vs. “dig”. In Sindarin the agental form of rosta- might be rostaron or rostron. Normally the modifier follows the modified element in Sindarin, so rostrongef, but I like the sound of cevrostron myself better. Note that f at the end of a Sindarin word represents the sound “v”, which is why it becomes cev- as the first element in a compound. As for a Tengwar Transcriber, I prefer Glaemscribe, but Tencendil is also good. They produce the same result.

The results are better than I expected, but I do see invalid words in both the Quenya and Sindarin lists. There are invalid Quenya initial clusters like mm- or nt-, and there are long vowels and diphthongs in final syllables and before consonant clusters where they should not occur. From the Sindarin list, the diphthong au appears in some polysyllables as well as final nn and ss, neither of which are possible.
Still, probably at least 95% of the words on the list are at least phonetically possible, at least from my eyeballing the results.

Gloss “tumbalemorna” by Eldamo Import
Excellent point. When I put this note in the Eldamo data I conflated it with the earlier phrase: Laurelindórenan lindelorendor malinornélion ornemalin
This first phrase is clearly a description of Lórien, but I agree the second phrase Taurelilómëa-tumbalemorna Tumbaletaurëa Lómëanor makes more sense as a description of Fangorn.

sentence structure
That is a very broad question. Both Quenya and Sindarin have sentence structures broadly similar to English (subject, verb, object), but there are many exceptions and special cases, a notable one being that in Sindarin an adjective usually follows the noun it modifies rather than coming before as in English.
I recommending reading a course on either Quenya or Sindarin for more details.

For the most recent information on Sindarin grammar I recommend Fiona Jallings A Fan’s Guide to Neo-Sindarin. As for a Sindarin Dictionary ... that’s what this site is for.
The plural for mellon “friend” is mellyn “friends”. See the entry for mellon on this site.

This isn’t an inherently bad idea, but there is more “depth” to Tolkien’s languages than in most Conlangs. In particular, he considered the full phonological history of his languages from an imagined “Primitive Elvish” language, much the same way that modern European languages evolved from ancient Primitive Indo-European languages.
Simple analysis of sound frequencies and letter combinations wouldn’t accurately reflect this depth. The bar for creating new words in Elvish is just “higher” than it is in most fictional languages.
EDIT: the XML data files for Eldamo have a very liberal Creative Common License, so feel free to use them for experiments like this.
