I'm trying to translate the phrase "death is not the end," which led to a long rabbit hole on the difference between and ui. At this point in my understanding, I think fírië lá matta would be the correct translation. Does that seem correct? Or would fírië lá i matta sound better?

Since you're referring to the end, I'd definitely use definite article i. Hence:

fírië lá i metta
fírië lá i metta
Death is not the end

Also, I noticed you use matta for end. That word is actually related to food! metta "end" is the word you're looking for.
