I know this shows how much of a newbie I am, but does the sense just mean the definition?

Not sure what you mean. In what context?

Like in glossary when you're trying to create a gloss and it says you have to add the sense.

"Sense" does then indeed indicate "definition," I think. I have not ever added a gloss before, however, so you can try adding a gloss in order to see whether it is true, and then delete the 'test.'
